Roast Guinea Hen...Grimaud Classic


1 Whole Guinea hen aprox. 3 lb
1 cup white wine
2 cup poultry stock
2 TBS olive oil
1 each...carrot, yellow onion, celery,
4-5 clove garlic
small red potatoes
1 lemon
tarragon
salt and pepper



Treat Guinea Hen like you do with your favorite Chicken dishes. it is excellent for grilling, brasing or roasting.

One of our favorites is roast Guinea Hen. Preheat overn to 425 degrees. Rub the bird with olive oil, stuff cavity with lemon, garlic and tarragon, Salt and pepper (we like to put a little more of the lemon, garlic, herb mix under the skin).

Place in roasting dich with stock, wine and vegetables. Plac in top rack of oven. Roast for 20 minutes and reduce heat to 350. Finish cooking until done (aprox 60 min. total)basting occasionally. Let sit 5-10 minutes before serving. A truly delicous classic from Grimauds Kitchen.
